The research has been aimed to verify the behaviour of some apple and pear cultivars of the local germplams in storage conditions. With the exception of the very early ripening
pears, which where stored at 5°C and 90% relative humidity (RH) because in a previous trial showed to be susceptible to physiological disorders at lower temperatures, all
cultivars were stored at 0-1°C and 90% RH for various storage periods followed by 4 or 7 days in shelf-life conditions at 20°C and 75% RH respectively for cultivars stored at 5°C or 0-1°C. At harvest and at the end of each storage period chemical analysis on juice, including pH, titratable acidity and TSS (total soluble solids), were carried out.In addition, firmness of the flesh was assayed and fruiut were also scored for visual appearance. Early ripening pears showed to have the best organoleptic characteristics, and even if the rate of deterioration was higher than those ripening later, seemed to be
more suitable for local market. Regarding the apples, those which ripened later showed the best organoleptic attributes and in storage behaved better than the "Red Delicious",
which was used as control, otherwise among the early ripening ones there were some, as the "Appio di Sassari", with very special flavour and taste.
