Abstract"Camusina Grande" pears harvested in middle July, were wrapped with a plastic film and conditioned at 33°C
for 18 hours in a water saturated ambient and then placed at 20°C and 75% relative humidity (RH). Respiration
activity and ethylene production rate were daily monitored for the following nine days. In addition, at 3 or 7
days, firmness and incidence of internal browning were respectively measured by an Effegi penetrometer setted
with a 8 mm in diameter probe, subjectevely determined. At the same inspection times, on the extracted juice,
were determined pH, titratable acidity and total soluble solids (TSS). High temperature conditioning delayed the
climacteric peak of three days with respect to the control. Film wrapping had a positive effect in slowing the rate
of estetical deterioration, but none of the treatments (either the conditioning or the wrapping) had any beneficial
influence on internal browning, which represent a major physiological problem in early ripening pears.
