Alternative URLs: AbstractThe constantly increasing demand for nutraceuticals is paralleled by a more pronounced request for natural ingredients and health-promoting foods. The multiple functional properties of cactus pear fit well this trend. Recent data revealed the high content of some chemical constituents, which can give added value to this fruit on a nutritional and technological functionality basis. High levels of betalains, taurine, calcium, magnesium, and antioxidants are noteworthy.
